I tried spam filter from MS Outlook 2003 and I don't like how it works. Bayesian spam filters calculate the probability of a message being spam based on its contents. They learn from spam and from good mail, resulting in a very robust and efficient anti-spam approach that returns hardly any false positives.
There are two good bayesian spam filters for Outlook and Outlook Express.
SpamBayes is free http://starship.python.net/crew/mhammond/spambayes/
and SpamBully is shareware http://www.spambully.com
