whats stopping a spammer from using a spam proported to be from Amazon. They often do "joe good" emails just to make it apear that a competitor is also spamming.

If someone sends spam supposedly from Amazon then what? close amazon? What happens if the same thing happens to a smaller site without amazon's reputation?

I think there are a lot of caveats with this!
