I'm looking forward to seeing how the the average PDF/Acrobat user embrasses the new Acrobat 8. I create PDF, convert to Word, edit and generate interactive forms. Those 4 features are the most important in my mind - the rest clutter the interface, lag the application and seem pretty pointless - take the Acrobat 7 Organizer as an example. I really hope the new conferencing features don't do either. After I tried version 7, I ditched Acrobat and started using Nitro PDF Professional - it includes neccessary features, opens PDFs much faster and is considerably cheaper!
